In 1994 Jean-Paul Signoret, a French pastry chef originally from Provence started Pastry Provençal with his dedicated partner Teresa Woodland, servicing local businesses with delicious French pastry.

The pies became so popular that they decided to give them all their attention. That marked the beginning of ‘Byron Gourmet Pies’. Jean-Paul's passion since an early age for pastry, cooking and travelling set the foundation for the creation of some of the most exciting, original and exotic gourmet  flavours.

14 years later after much hard work and innovation, with the help of their 2 sons Nat & Jordie, and daughter Sylvie and some tremendous staff, Byron Gourmet Pies now enjoys the reputation of being one of the finest gourmet pie-makers in the country.
